Best Ever Peach Curd Cookies [printer friendly version]
Kurtz Market products2 cups (500 mL) sifted all-purpose flour
2 tablespoons (30 mL) sugar
salt
1 cup (250 mL) unsalted butter, chilled
1/3 whipping (80 mL) cream
1 teaspoon vanilla extract
½ cup (125 mL) sugar
1 cup (250 mL) icing sugar
1 teaspoon (5 mL) water
1 jar Kurtz Orchards Peach Curd

In a large bowl, stir together flour, sugar and salt. Cut butter into cubes and distribute them over the flour mixture. Using a pastry blender, cut the butter into the flour mixture until it resembles coarse meal. In a small bowl, stir together the cream and vanilla. Add cream mixture to flour mixture and stir to combine. Cover and refrigerate for 2 hours or overnight.

Preheat oven to 375F (180C). With a lightly floured rolling pin on a lightly floured work surface, roll out half the dough to a 1/8-inch thickness. Cut our cookies with a round cookie cutter. Transfer rounds to an ungreased baking sheet. Bake for 7 to 8 minutes or until cookies are just beginning to brown slightly around the edges. Remove from baking sheet to a wire rack and cool completely. Repeat with remaining cookie dough.

To prepare cookies, mix icing sugar and water together to form a thick icing. Spread icing over half the cookies. Spread a thick layer of peach curd over the remaining cookie halves. Place a cookie topped with icing on top of a cookie topped with peach curd to form a sandwich. Makes 24 cookies.
